1. Who we are:

The Università degli Studi di Perugia, founded in 1308, is one of the oldest universities in Italy and one of the most accredited, offering a wide variety of courses in all fields of education. Our goal is to provide students with the finest quality degree programmes and academic opportunities within a stimulating multicultural environment, along with the opportunity to enjoy an excellent lifestyle and foster their personal and academic growth while studying at the highest level.

The School of Veterinary origins can be placed in 1700, the century in which it was established a lectureship. In 1860 the school was incorporated in the School of Medicine by the name of "School of Medicine and Veterinary Surgery". With Royal Decree 27 June 1864 the school was separated from that of Medicine. The School of Veterinary Medicine was further reformed in 1896 and, finally, by Royal Decree of 29 October 1925 the School was transformed into the Faculty and then in Department (2014). The Department of Veterinary Medicine is currently involved in different courses (bachelor and master degrees) and is located just outside the walls of the old town. For the practical activities of students, the Department have a specific Farm and an University Veterinary Teaching Hospital. There is an agreement to carry out practical activities in the city slaughterhouse and in farms, industries, research centers and the public veterinary service for veterinary public health and food inspection. The Department (specifically for the 5 year degree in Veterinary Medicine) is approved by EAEVE/AEEEV (European Association of Establishments for Veterinary Education / Association Européenne des Etablissements d' Enseignement Vétérinaire).

  1. The course:

The growing global market requires more guarantees on food products, in particular a high safety level and traceability for the final consumers. Consequently, the need for professional figures armed with knowledge and skills in food safety management is increasing.

The Master in Feed and Food Safety for Human Health (F2SH2) is a First Level Master and can be attended by holders of First Level university degrees (3 years = Bachelor) in agriculture, biology or veterinary sciences.

The F2SH2 Master’s degree has the purpose to provide students with knowledge and skills to address issues related to food safety, from primary production to their transformation, considering the whole production chain. Particular attention will also be paid to procedures and control systems in feed production for the livestock.

The F2SH2 Master’s degree will create professional figures in Food Safety, who could also work in emerging or developing countries. These operators will be equipped with the knowledge to find their working position in different areas: from the productive one (hygienic control of production in food industries), to the analytical (laboratories); from the control area (national audit organizations) to the political/managerial one (government agencies).

The F2SH2 Master’s degree aims at enhancing and broadening knowledge and skills in feed and food safety and their impact in human health, with a properly balanced mixture of classroom lectures, lab and practical activities, visits to farms and feed and food industries, individual and group learning, and internships.

The course will focus on the study of topics related to:

  • safety of primary crop production, including the impact of genetic engineering, environmental contamination, the use of chemicals, technology and hygiene;
  • farming systems, with particular attention to bio-security as a guarantee on derived products;
  • feed production systems: their sanitary characteristics, the possible risks for human health and the main instruments for monitoring animal feed industry products;
  • safety of food of animal origin, with particular attention to both biological and chemical risks for human health;
  • the hygienic production and risk analysis in food of animal origin;
  • traceability systems and labelling requirements for foods of animal origin.

The participants will improve and expand their knowledge and skills in the following subjects:

  • assessment of the main hygienic characteristics of food;
  • safety evaluation of feed for livestock;
  • monitoring of farming activities following bio-safety criteria;
  • preparation of a self-control planning based on HACCP in food and feed industries;
  • execution and monitoring of microbiological analysis of food of animal origin, for the evaluation of their hygienic qualities;
  • execution and monitoring of chemical and physical analysis on food.

Furthermore, the student will acquire skills to relate with different operators working in food production industry, achieving problem-solving abilities in hygiene and food safety.

The F2SH2 Master’s degree is a full-time one year program (60 EUC = European University Credits = 1,500 hours), fully taught in English language, recognized by the Italian and European educational system.

Lessons will be held by professors from the University of Perugia and invited external professors, researchers or specialized staff (other Italian and foreign Universities, Research Centers, Italian Ministry of Health). Supplementary individual stage activities (100 hours =4 EUC) will be planned in research centers, farms and feed and food industries.

Intermediate and final exams, mostly written, will assess the performance and achievements of participants.

The participation of renowned lecturers from different Universities and Institutions (research centers and ministries) offers a high-profile educational value of this Master.

Moreover, the opportunity to join practical activities and to undertake an internship in production and research facilities will ensure comprehensive training for a professional operator in food safety.

Those students completing the F2SH2 Master and who wish to continue their studies at the University of Perugia, can directly access the second year of a programmed Master Degree (two year program – 120 EUC).

The Master will be held inSeptember 2016 – September 2017.
